If I were to eat only one cheese for the rest of my life, it would be this. The milk for this cheese is sourced from the Jura Alps, where happy cows graze freely on grass, flowers and herbs high in the mountains. Comte is a semi-hard alpine style with a simple but elegant character. Think caramelised butter, roasted nuts and a grassy aroma that lingers in a floral and mineral finish. The texture is smooth and supple with a gentle hint of crystallisation. The 'Couronne' (crown) is a grading status for wheels that are awarded the highest quality by a panel of judging specialists (yes, a real job). Wheels of Comte are graded on quality rather than age, producer or brand. 

Comte is the hero of a traditional Croque Monsieur, delicious on toast with mustard and cornichons, or enjoyed simply on its own.
