Tasting Notes | A sensational semi hard ewes milk cheese hailing from Corsica, a hilly Mediterranean isle belonging to France. The name Fleur du Macquis translates as 'flower of the wild'. Macquis is a local term referring to the untamed bramble and underbrush of the Corsican landscape, which is overgrown with wild shrubs, herbs and flowers. The macquis are notorious for being a hiding place for outlaws - mysterious and untamed - though intrinsically beautiful. Fleur du Macquis is a celebration of this unconventional beauty - a simple cheese coated in a bouquet of rosemary, thyme, wild flowers and other herbs that grow on the island. It looks a bit unkempt at first, but the assertively herbaceous rind masks a gentle, unsuspecting delight inside. I enjoy this cheese best on it's iwn - left on the kitchen table to chip away at slowly after a meal. The savoury character marries best with olives, pickled green tomatoes or a well ripened pear. |
