Tasting Notes | Even in our cheddar loving nation, Tassie Pyengana Cheddar is in a league of it's own. A cut above its wax wrapped counterparts, Pyengana is a traditional cloth wrapped cheddar with old world elegance and charm. Produced by Tasmanian farmer John Healey, using methods established by his great grandfather at the turn of the century. The cheese is handmade with milk from their own farm, run by the Healey family since 1898. The cows happily graze on lush pasture, and their rich milk results in an intensely creamy cheddar with earthy, nutty character. This is one of the oldest artisan cheeses in Australia. The cheese has an open texture with a crumbly curd structure. Being a farmhouse cheese, variations in flavour will appear seasonally. We find this batch to be slightly granular in texture, with notes of honey, herbs and a grassy aroma. |
