Our top pick for a 'wild card' cheese this Christmas. A beautifully delicate yet remarkable Italian cheese made with a harmonious blend of cow, goat and sheep milk. The flavour is more complex and interesting than a typical cow's milk brie, but it is not overwhelmingly 'goaty', strong or smelly. Think lemon cheesecake, marscapone and hints of fresh thyme.
I love this one as a centrepiece cheese - serve it on its own with some fresh fruit, raspberry jam, biscuits or baguette - or as one of a few cheeses on a mixed plate.
