A fine example of an Italian classic; Mauri Taleggio is considered one of the best DOP cheeses made in Italy. Stronger on the nose than on the palate, the flavour is mellow and sweet with a distinctive yeasty quality.

The cheese is matured for around six weeks in natural caves high in the Italian alps, encouraging the development of a unique flora on the outer rind. The sticky, pungent orange rind is washed and brushed during maturation, developing a thin bloom speckled with blue moulds. 

Taleggio is pleasant and easy to enjoy, but we recommend it for well seasoned cheese lovers.
