| Tasting Notes | The name translates to 'drunk on prosecco', and honestly we don't mind if we do. So the story goes, this style of cheesemaking came about during WWI, when Italian families would hide their cheese in old wine barrels to protect them from hungry passing troops. Wheels of simple, rustic Italian cheese have been soaked in sparkling Prosecco wine as they are matured for around 6 months. The cheese is fruity and mild, with a pleasing harmony between the creamy, lactic cheese and the delicate sweetness of the wine. All in all, it is a pretty addictive cheese experience. Great before dinner with a glass of something bubbly, Prosecco being an obvious choice. Pair with crisp slices of green apple or slightly under-ripe pear. |

We deliver cheese using insulated boxes sent via express post. We can deliver to metro areas in NSW, VIC & QLD. We cannot deliver to rural areas where express post takes multiple days to arrive, or to WA, SA, NT or TAS. We dispatch cold orders Tuesday-Thursday only.
