The potatoes are collected in Soria between the end of summer and the beginning of autumn, and fried in pans in pure olive oil at an exact frying point, then seasoned with very little salt. The climate, the altitude and the exact point of ripening at harvest give Espinaler crisps its exceptional flavour.
