Parmigiano Reggiano is not just a staple food, but easily one of the most loved and widely traded cheeses there is. A truly ancient cheese; authentic DOP versions are still made today using the very same method that existed when we still thought the earth was flat. An A-grade parmesan is intensely dry and dense, yet somehow retains a hint of the creamy goodness in the milk. The texture is granular and blissfully crunchy. Those white specks often mistaken for salt are actually clusters of amino acids that crystallise with age. The flavour is all at once salty, spicy and sweet with an explosive burnt caramel finish. You don't need anything but a knife to enjoy this cheese, but you can improve pretty much anything else you eat by adding a few shavings. 250g
